Nowadays, cookware is available in all shapes and sizes. When selecting cookware for your kitchen, you should be aware that certain materials are better suited to specific cooking procedures. Copper cooking vessels have been used since the dawn of history. Even though copper cookware is considered as the crème de la crème of cooking utensils because of their extraordinarily finer heat-conduction ability, copper cookware is also heavy, extremely expensive, fragile and hard to maintain. Copper cookware involves too much maintenance to be pragmatic for most kitchens.

Copper utensils are renowned for their heat conductivity, but its major drawback is that copper cookware reacts adversely with acidic foods (such as tomatoes, citrus juice, vinegar) causing copper to percolate into cooked foods, leaving an unpleasant taste and coloration. Copper deposits in cooked foods can cause queasiness, nausea and diarrhea. For this reason, most of your cooking pots and frying pans should be made from stainless steel lined a thick layer of copper. This provides the cookware strength, durability, versatility, ability to conduct heat evenly, and also fits your budget. This ideal combination gives you the best of both worlds - better heat-conduction capability of copper plus the non-reactive shell of stainless steel.

Connoisseurs and master-chefs absolutely love copper cookware because of its quick reaction time. Copper is an excellent conductor of heat and has roughly ten times the heat conductivity ability of stainless steel and glass, and twice that of aluminum. Avoid excessive heating and always place food in the pan before it gets intensely hot, so that food or liquid absorbs the heat, thereby preventing damage to the cookware's lining.

Stainless steel utensils bonded or laminated with copper are most practical as they facilitate equitable distribution of heat. The key advantage of these cooking utensils is that copper requires only low to moderate heat to obtain optimal results. And the better conductivity of copper makes it particularly responsive to almost every cooking need. Although copper utensils are hard to maintain, it's not necessary to keep these cookware gleaming and polished at all times. Just keep them clean with commercial copper cleaners or homemade blend of flour, salt and water.
