Best Stainless Steel Skillets

| What is the best stainless steel skillet for your kitchen? First there are basically two types of stainless steel cookware on the market today. Coated (non stick) and uncoated. So depending on your cooking process and the type of foods you are going to prepare will determine whether a coated pan is ideal or uncoated is right for the job. In general, good stainless steel cookware should be heavy enough to transfer and conduct heat evenly in the pan and should have long handles and a lid. The skillet should also be large enough so that the foods you are preparing are not touching in the pan. Typically a 12-inch skillet is the best skillet size for most cooking needs. This cookware is ideal, whether it has a coated or uncoated surface because it does not react to acidic ingredients like tomatoes and lemon juice just to name a few. This would be a problem if using cast iron cookware because it would react to the acid making it unsuitable for most dishes. Stainless steel cookware that has a non stick surface is good for preparing dishes that are going to be gooey and sticky which could be a problem for a traditional uncoated skillet. On the other hand the best stainless steel skillets for preparing sauces are the traditional uncoated skillets, because at the end of the cooking process the bottom of the pan will have all the sticky bits in which you can make a sauce from by deglazing the pan.
